Sofrit pagès recipe
Yes, dear friends, here is the recipe for the wonderful and unique Sofrit pagès, so you can enjoy it at home or whet your appetite and try it at one of the island’s best restaurants.
This distinctive, hearty delicacy is a popular traditional dish: a substantial stew. The recipe is based on traditional Ibizan sausages, potatoes and a mixture of meats, as it was prepared during the traditional slaughter season, when people needed the extra energy this dish provided.
• 1/2 hen
• 250 g lamb
• 250 g pork
• 2 tablespoons lard
• Oil
• 1 piece of pork belly
• 1 piece of sobrasada
• 1 piece of butifarra sausage
• Garlic
• Parsley
• Potatoes (small, or diced if large)
• Salt
• Pepper
• Ground cinnamon
• Cloves
• Saffron
• Paprika
• Pepper (vegetable)
Preparing Sofrit pagès
1.- Make a stock with the hen, lamb and pork, then set aside.
2.- In a separate pot, fry the pork belly, sobrasada, butifarra, 2 heads of garlic, a crushed garlic and parsley mixture, and the potatoes in the lard and a drizzle of oil.
3.- Once well browned, add the chopped meat and 2 or 3 glasses of the reserved stock.
4.- Season with salt and pepper to taste, then add a pinch of cinnamon, 3 or 4 cloves, saffron and paprika.
5.- Reduce the heat to its lowest setting and stir until almost all the stock has been absorbed.
6.- Use the remaining stock to make a soup for the first course, followed by the Sofrit pagès as the main course.
