Ibiza recipe: Flaó

Friends, this is the final week of Ibiza recipes in our series! We have shared a meat recipe and a fish recipe, and to finish these past few weeks on a high note, today we introduce one of Ibiza’s most iconic desserts: Flaó.

Flaó recipe

Yes, dear friends, here is the recipe for the wonderful, unique and sweet Flaó. According to Diario de Ibiza, in the past, like so many traditional dishes, flaó was associated with a religious celebration. The Encicopledia d’Eivissa y Formentera states that the word first appears in Ramon Llull’s book Blanquerna: 

“He gave him a flaó to eat at school if he felt like something to eat.”

According to historian Marià Torres, the earliest traces of its existence date back to the 13th century. Until a few years ago, it was made only during Holy Week to be served on Easter Sunday, but today it is prepared all year round. And after this brief historical introduction…

Ingredients for the Flaó base:

  • 500 g wheat flour
  • 2 eggs
  • 125 g butter
  • 1 sachet baking powder 
  • 1 small glass anise liqueur, lemon zest
  • Anise seeds
  • A little oil
  • 100 g sugar
  • 4 eggs
  • A pinch of salt

Ingredients for the Flaó filling  

  • 500 g fresh goat’s cheese
  • 300 g semi-cured sheep’s cheese
  • A few mint leaves
  • 500 g sugar and a pinch of salt

Preparing the Flaó base

1.- Put the flour and baking powder in a bowl, then add the sugar, anise seeds and salt. Knead well. 

2.- Add the butter, eggs and small glass of anise liqueur. Knead for a few more minutes. 

3.- Grease your chosen baking tin with butter and dust with a little flour ( flaonera). Spread the dough in the tin and set aside.

Preparing the filling 

1.- Mash the cheeses. Set aside. 

2.- Mix the eggs with the sugar and gently add the cheese mixture.

3.-Finally, add the mint and salt. Pour over the prepared base. 

4.- Place in the oven and bake for approximately 45 minutes at 180°C.

5.- Leave to cool. If you like, serve with a small glass of Hierbas de Ibiza. Cheers!
